Chickpea Tikka Masala

Ingredients

  • 1 large onion, diced (250g)
  • 1 tbsp fresh ginger, minced
  • 4 cloves garlic, minced
  • 1 tsp each: paprika, coriander, turmeric, cumin, garam masala, salt
  • 1/2 tsp each: ground mustard, cayenne, cinnamon
  • 2 bay leaves
  • 3 medium ripe tomatoes, diced (400g) -2 medium potatoes, cubed (300g)
  • 1 1/2 cups cooked chickpeas (280g, drained) -1 cup full-fat coconut milk (200g)
  • 1 cup frozen peas (150g)

Preparation

  1. In a large pot, heat some oil and saute the onion, ginger, and garlic for 5 minutes. Stir in spices and bay leaves. Once fragrant, add in potatoes and tomatoes, then cover the pot and simmer for 10-15 minutes, until potatoes are tender

  2. Add in chickpeas, coconut milk, and peas

  3. Cook for 5 more minutes, then remove from heat and serve warm
