Easy Vegan Turmeric Cauliflower Rice

Ingredients

  • 3 cups of cauliflower, riced
  • 1/3 cup of carrots, diced
  • 1/2 cup of peas
  • 1/2 cup chopped onions
  • 2-3 tbsp chopped fresh cilantro
  • Juice of half a lemon
  • 1/2 tsp cumin
  • 1/2 tsp turmeric powder
  • 1/4 tsp garam masala
  • 1/2 tsp ginger powder
  • 1/2 tsp garlic powder
  • 1/2 tsp fresh black pepper
  • Himalayan Salt, to taste

Optional additions

  • Nuts or seeds of choice

Preparation

  1. Heat pan and add a tablespoon of filtered water.

  2. Sauté spices until fragrant.

  3. Add onions, peas, and chopped carrots.

  4. Add cauliflower and cook until tender, but do not overcook.

  5. Serve with lemon juice and cilantro on top and enjoy!

Notes

  1. Optionally, add nuts or seeds when serving.
