Indian-Spiced Kidney Bean Bowl

Ingredients

  • 1 small yellow onion
  • olive oil or veggie broth
  • 1 tsp maple syrup
  • 1 inch ginger (minced)
  • 3 garlic cloves (minced)
  • 1 green chili (deseeded
  • minced)
  • 1/2 tsp ground cumin
  • 1/2 tsp ground coriander
  • 1/2 tsp garam masala
  • 1/2 tsp smoked paprika
  • 1 tbsp tomato paste
  • 1-15oz can crushed tomatoes and 1-15oz can kidney beans
  • Salt to taste

Preparation

  1. Sauté 1 small yellow onion (thinly sliced) in a little olive oil or veggie broth until starts to brown a little

  2. Add 1 tsp maple syrup and sauté a few more minutes until golden brown

  3. Add 1 inch ginger (minced), 3 garlic cloves (minced), 1 green chili (deseeded, minced), 1/2 tsp ground cumin, 1/2 tsp ground coriander, 1/2 tsp garam masala, 1/2 tsp smoked paprika

  4. Sauté another minute until fragrant, adding more oil or veggie broth as needed

  5. Add 1 tbsp tomato paste and cook another minute while stirring

  6. Add 1-15oz can crushed tomatoes and 1-15oz can kidney beans (with liquid)

  7. Bring to a boil before reducing heat and simmer 10 minutes

  8. Add some veggie broth if desired

  9. Salt to taste
