Indian-Spiced Kidney Bean Bowl
Ingredients
- 1 small yellow onion
- olive oil or veggie broth
- 1 tsp maple syrup
- 1 inch ginger (minced)
- 3 garlic cloves (minced)
- 1 green chili (deseeded
- minced)
- 1/2 tsp ground cumin
- 1/2 tsp ground coriander
- 1/2 tsp garam masala
- 1/2 tsp smoked paprika
- 1 tbsp tomato paste
- 1-15oz can crushed tomatoes and 1-15oz can kidney beans
- Salt to taste
Preparation
Sauté 1 small yellow onion (thinly sliced) in a little olive oil or veggie broth until starts to brown a little
Add 1 tsp maple syrup and sauté a few more minutes until golden brown
Add 1 inch ginger (minced), 3 garlic cloves (minced), 1 green chili (deseeded, minced), 1/2 tsp ground cumin, 1/2 tsp ground coriander, 1/2 tsp garam masala, 1/2 tsp smoked paprika
Sauté another minute until fragrant, adding more oil or veggie broth as needed
Add 1 tbsp tomato paste and cook another minute while stirring
Add 1-15oz can crushed tomatoes and 1-15oz can kidney beans (with liquid)
Bring to a boil before reducing heat and simmer 10 minutes
Add some veggie broth if desired
Salt to taste
