Gluten-Free Vegan Chana Masala
Ingredients
- 2 tbsp / 30 ml olive oil
- 2-3 garlic cloves, finely chopped
- 1 large onion, finely sliced
- 5 tsp of finely grated ginger
- 1-1.5 tsp salt
- 2 tsp ground coriander
- 1-1.5 tsp hot chilli powder (adjust to your liking)
- 4 tsp ground cumin
- 1.5 tsp ground turmeric
- 2 tsp garam masala
- 5 cups cooked chickpeas
- 2 x 400g tins of plum tomatoes
- 2 tsp sugar (especially if tinned tomatoes contain citric acid)
For serving
- cooked basmati rice, to serve
- fresh coriander, to serve
Preparation
Heat the olive oil in a large pan over medium heat
Add and sauté the onion until golden brown
Add garlic and ginger, and cook for 1-2 minutes until fragrant
Stir in the spices (coriander, chilli powder, cumin, turmeric, garam masala, and salt), and cook for another minute
Add the plum tomatoes and sugar, breaking up the tomatoes if necessary, and simmer for a few minutes
Add the cooked chickpeas and a little water if needed, then simmer for 15-20 minutes until flavors meld
Serve hot with cooked basmati rice and fresh coriander
