Sushi Style Vegan Rice Burgers

Ingredients

  • 3 cups cooked sushi rice
  • 1 package Field Roast FieldBurger, thawed to room temperature
  • 2 tablespoons rice vinegar
  • 1 tablespoon mirin
  • a pinch of salt (optional)
  • Furikake seasoning or cut nori sheets (optional)

Fillings

  • kale leaves
  • avocado slices
  • julienned purple cabbage

Condiment

  • yellow mustard
  • maple syrup

Preparation

  1. Season the cooked rice with mirin and rice vinegar, then let it cool.

  2. Shape the rice into buns by placing about 1/3 cup of rice into a wrapped 2-inch diameter round bowl with a flat bottom and pressing tightly with a spoon or spatula; alternatively, use a glass bowl or sushi presser.

  3. Heat a non-stick pan with a drizzle of oil over medium heat.

  4. Sear the rice buns until golden brown on both sides.

  5. Set the rice buns aside until ready to use.

  6. Add a little more oil to the same pan, then sear the thawed Field Roast FieldBurger for 2-3 minutes per side until slightly crispy.

  7. Place one rice bun on a plate.

  8. Layer with a kale leaf, a handful of julienned purple cabbage, the seared FieldBurger, and avocado slices.

  9. Add a tiny spoonful of maple mustard.

  10. Top with another rice bun.

  11. Sprinkle with Furikake seasoning.

  12. Serve immediately.
