Superfood Sushi with Pink Rice
Ingredients
Pink rice
- 250g sushi rice
- 3 Tbsp rice vinegar
- 1 Tbsp maple syrup
- 1 tsp salt
- 1 tsp pink unicornsuperfoods pitaya powder
Filling
- 2 Tbsp soy sauce
- 1 Tbsp sesame oil
- 1 Tbsp mirin
- 1 tsp garlic powder
- 300g oyster mushrooms, chopped
- 1 carrot, julienned
- 1 cucumber julienned
- 1 avocado, sliced
- purple cabbage, sliced
Additional
- 6 nori sheets
- black sesame seeds
Preparation
Prepare the sushi rice according to the package instructions.
Add the rice vinegar, maple syrup, salt, and pitaya powder to the rice and combine well. Set aside to cool down.
Place all marinade ingredients in a bowl and whisk together. Add the oyster mushrooms and coat them evenly with the marinade.
Heat a saucepan over medium heat and add the mushrooms. Fry for 5-8 minutes until they become dark brown and chewy.
Prepare the vegetables as instructed.
Take a nori sheet and place it on a bamboo mat. Spread 3-5 tablespoons of rice on the sheet and press it down evenly. Add the fillings and roll the maki rolls carefully.
Repeat the rolling process until all ingredients are used. Cut the rolls into pieces and serve with soy sauce.
