Vegan Avocado and Cucumber Sushi Bowls
Ingredients
- 2 cups cooked sushi rice
- 1 ripe avocado
- 1 small cucumber
- 1 carrot
- 2 nori sheets
- 1 tablespoon sesame seeds
Dressing
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon agave syrup
- 1/2 teaspoon wasabi paste
- 1/2 teaspoon sesame oil
- Salt, to taste
Preparation
Slice the avocado, julienne the cucumber and carrot, and crumble the nori sheets.
In a small bowl, mix the soy sauce, rice vinegar, agave syrup, wasabi paste, sesame oil, and salt to make the dressing.
Divide the cooked sushi rice into serving bowls.
Top with the prepared vegetables, nori, and sesame seeds.
Drizzle with the dressing and serve.
