Easy Veggie Sushi Bowl

Ingredients

  • 1 1/2 cups cooked rice
  • 8 oz silken tofu
  • small cucumber, sliced and quartered
  • 1 cup fresh sprouts
  • 1 avocado, sliced
  • 6-8 sheets seaweed snacks

Accompaniments

  • sesame seeds
  • spicy red pepper dressing or miso mayo
  • soy sauce
  • pickled ginger

Preparation

  1. Split the ingredients between two bowls and assemble in rows.

  2. Serve with sesame seeds, pickled ginger, soy sauce, and miso mayo dressing.
