Sushi Sandwich with Chipotle Cashew Mayo

Ingredients

Rice

  • 1 cup brown rice
  • 1 cup red rice
  • 1 1/2 tbsp rice vinegar
  • 1 tbsp cane sugar
  • Pinch of salt
  • 2 tbsp sesame seeds

Fillings

  • Avocado
  • Baked sweet potato
  • Cilantro
  • Cucumber
  • Carrot

Chipotle cashew mayo

  • 1/2 cup raw cashews
  • 1/4 cup water
  • 2 tbsp nutritional yeast
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • Juice of 1 lemon
  • 1-2 chipotle peppers

Preparation

  1. Soak cashews in hot water for 10 minutes, then discard water and blend with water, nutritional yeast, salt, pepper, garlic powder, onion powder, lemon juice, and chipotle peppers until smooth, adding extra water if needed and adjusting seasonings to taste

  2. Cook 1-2 cups of rice according to package directions, then add rice vinegar, cane sugar, salt, and sesame seeds

  3. Set up workspace by laying plastic wrap over a cutting board and placing a nori sheet smooth side down

  4. Spread rice onto the center of the nori sheet positioned in a diamond shape, wetting hands to prevent sticking

  5. Add toppings such as avocado, baked sweet potato, cilantro, cucumber, or carrot

  6. Fold one edge of the nori sheet towards the center of the rice and press down to stick, then peel back plastic wrap and repeat for opposite side and remaining corners

  7. Keep wrapped in plastic for a few minutes, pressing gently to hold shape, and serve as is or take for lunch

Tips

  1. Wet your hands while handling rice to prevent it from sticking
