Plant-Based Vegan Sushi Bowl

Ingredients

Veggies

  • Shredded carrot
  • Thinly sliced cucumber
  • Pickled onions
  • Edamame (frozen already shelled)
  • Chopped nori
  • Chopped radish
  • Sesame seeds

Sushi rice

  • 1 cup sushi rice
  • 1 1/2 cup water
  • 1/4 cup rice vinegar
  • 1 tablespoon agave
  • 3/4 teaspoon salt

Spicy mayo

  • 1/4 cup vegan mayo
  • 2 teaspoons harissa
  • 1/2 lemon juiced
  • Dash salt

Preparation

  1. Cook the sushi rice with water according to package instructions or until tender.

  2. In a separate bowl, mix the rice vinegar, agave, and salt to create the seasoning.

  3. Once the rice is cooked, gently fold in the vinegar mixture and let it cool.

  4. Prepare the spicy mayo by whisking together the vegan mayo, harissa, lemon juice, and a dash of salt until smooth.

  5. Assemble the sushi bowl by placing the seasoned rice at the bottom of a bowl, then add the prepared veggies, chopped nori, radish, and sesame seeds.

  6. Drizzle with the spicy mayo and serve immediately.
