Easy Vegan Deconstructed Sushi Bowl

Ingredients

Bowl

  • Cooked sushi rice
  • Red cabbage, shredded
  • Avocado
  • Cucumber, thinly sliced
  • Carrot, julienned
  • Edamame
  • Dried nori, shredded
  • Pickled sushi ginger
  • Sesame seeds

Sauce

  • 2 tbsp tamari sauce
  • 1 tsp sesame oil
  • 1 tbsp rice vinegar (or use liquid from pickled sushi ginger jar)
  • 1/2 tbsp maple syrup

Preparation

  1. Whisk together the sauce ingredients until well combined.

  2. Prepare the bowl by adding cooked sushi rice as the base.

  3. Top with the vegetables and other ingredients: shredded red cabbage, avocado, thinly sliced cucumber, julienned carrot, edamame, shredded dried nori, pickled sushi ginger, and sesame seeds.

  4. Drizzle the sauce over the assembled bowl.

  5. Serve immediately to enjoy the fresh flavors and textures.
