Vegan Sushi Bowl with Sweet Chili Mayo

Ingredients

  • Sushi rice
  • avocado
  • cucumbers
  • carrot
  • seaweed
  • edamame
  • vegan salmon flakes

Sweet chili mayo

  • 10 oz silken tofu
  • 1/4 cup water
  • 1/4 cup sweet chili sauce
  • 2 tbsp hemp seeds
  • 1 tbsp chili oil or 1 tbsp avocado oil + 1 tsp sriracha
  • 1 tsp sea salt

Preparation

Sweet chili mayo

  1. Combine all the ingredients in a high speed blender until smooth and creamy.

  2. Chill and enjoy.

Bowl assembly

  1. Cook sushi rice according to package instructions.

  2. Chop the avocado, cucumbers, and carrot.

  3. Arrange the sushi rice in a bowl.

  4. Add the chopped vegetables, seaweed, edamame, and vegan salmon flakes.

  5. Drizzle with sweet chili mayo and serve.
