Vegan Poke Bowl with Tahini Sauce
Ingredients
- crispy tofu
- julienned carrot
- cucumber
- pickled beets and ginger
- sushi rice
- nori
- avocado
- black sesame and green onion
Sriracha tahini sauce
- big dollop tahini
- 1 clove garlic minced
- tsp maple syrup
- squirt of sriracha
- salt
- water to thin
- juice of 1/2 lime
Preparation
Mix all the Sriracha Tahini Sauce ingredients together in a bowl and adjust with water to desired consistency.
Cook the sushi rice according to package instructions until tender.
Prepare crispy tofu by frying or baking it until golden and crisp.
Prepare the vegetables by slicing or arranging them as needed, using store-bought pickled items if available.
Assemble the poke bowl by layering the sushi rice, vegetables, tofu, and other ingredients in a bowl, then drizzle with the sauce.
