Homemade Vegan Sushi Rolls with Eggplant
Ingredients
- Aubergine or eggplant
- Oil
- Hoisin sauce
- Carrots
- Cucumber
- Basmati rice
- Rice vinegar
Preparation
Cook basmati rice for a longer time to make it sticky.
Add rice vinegar to the cooked rice and mix well.
Fry the aubergine in oil until cooked.
Add hoisin sauce to the fried aubergine and stir to combine.
Slice carrots and cucumber into thin strips for the filling.
Assemble the sushi rolls using the prepared rice, aubergine mixture, carrots, and cucumber.
Slice the rolls into pieces and serve.
