Spicy Tomato Sushi Rolls

Ingredients

  • 1 1/2 cup of cooked forbidden rice or brown rice
  • 2 cups of chopped seeded Roma tomatoes
  • 1 tbsp of tamari or low sodium soy sauce
  • 1 tsp grated fresh ginger
  • 1 tbsp sriracha sauce
  • 2 tbsp rice vinegar
  • 1 tbsp pure maple syrup
  • 4 - 8 inch nori sheets
  • 1/2 of avocado peeled and sliced
  • 2 Persian cucumbers peeled and julienned
  • 1 medium carrots peeled and julienned
  • 1 cup of spinach

Preparation

  1. In a bowl, marinade the sliced tomatoes with tamari, sriracha, maple syrup and ginger.

  2. Let it stand for 10 minutes.

  3. Stir in rice vinegar to the cooked rice mixture.

  4. Lay a sushi mat on a flat surface or on a cutting board.

  5. Place nori sheet lengthwise and with damp fingers, spread one fourth of the rice mixture on the nori leaving 1/4 inch room on the side edge.

  6. Arrange two slices of avocado, cucumbers, carrots, spicy tomato mixture, and two spinach leaves along the center of flattened rice layer.

  7. Roll up nori toward the unfilled edge tightly using the sushi mat.

  8. Brush the edges with some water to seal.

  9. Repeat the process with the remaining ingredients.

  10. Enjoy the sushi rolls with tamari and fresh grated ginger.

Notes

  1. This recipe is a great way to use leftovers like cooked forbidden rice and tomatoes.
