Sweet Coconut Rice Porridge with Mango

Ingredients

  • 1 1/2 cup short grain or jasmine rice
  • 2 cups of water
  • 1 can of coconut milk
  • 3/4 cup coconut or turbinado sugar
  • 1 tsp salt
  • 2 med ripe mangoes

Preparation

  1. Put the rice in the medium sauce pan and wash few times

  2. Drain the water

  3. Then add 2 cups clean water to washed rice and bring it to boil over a med heat

  4. Cook the rice until al dente

  5. When water starts reducing where you could see the top of the rice, add the coconut milk and stir into the rice to combine

  6. Adjust the heat to low and let it simmer, add the sugar, salt and half of the sliced mangoes

  7. Skin removed

  8. Saved the other half for the topping

  9. Simmer the porridge for 15 min until the rice is soft and porridge has a creamy consistency

  10. Serve the porridge in the bowls, top them of with mango roses (watch my tutorial on reels) and more coconut milk if desired

  11. Enjoy!
