Vegan Fried Rice with Vegetables and Spices

Ingredients

  • 1/2 onion
  • 1 carrot
  • 1/2 zucchini
  • 1/2 head of broccoli
  • 2 sausages, vegan chorizo (140g)
  • 2 dl green peas
  • 1 tbsp curry powder
  • 1 tbsp paprika powder
  • 1 tbsp soy sauce
  • 1 tsp turmeric
  • Salt and pepper
  • 2 dl rice

Preparation

  1. Cook the rice.

  2. Chop the vegetables and sausage into small cubes or pieces.

  3. Fry them in oil in a large pan.

  4. When the vegetables start to brown, add the spices.

  5. Add the cooked rice and combine everything.

  6. Serve and enjoy.

Tips

  1. For a variation, wrap the fried rice in a burrito to make it even better.
