Vegan Rice Recipe Is Easy and Looks Nice and Tasty
Ingredients
- 1 medium onion, chopped
- 3 cloves garlic, crushed
- 1 tbsp smoked paprika 1 tbsp dried oregano
- 200g (8oz) rice (dry) (I would use Brown Rice)
- 1 (16oz can) tomatoes
- 1 (16oz can) chickpeas
- Handful edamame beans (or veg of choice)
- 350ml (12oz) vegetable stock
- 1 green onion, sliced
- Salt & pepper
Preparation
Fry the onions and garlic until soft
Add the herbs and paprika
Fry for another minute
Add the rice and stir, cook for 3 mins
Add tomatoes, veg and stock
Season to taste with salt & pepper
Stir, then add lid and cook gently for 20 mins
Leave lid on and let it rest for 5 minutes
Fluff the rice with a fork then serve with spring onion sprinkled on top and a dash of chilli sauce
