Vegan Rice Recipe Is Easy and Looks Nice and Tasty

Ingredients

  • 1 medium onion, chopped
  • 3 cloves garlic, crushed
  • 1 tbsp smoked paprika 1 tbsp dried oregano
  • 200g (8oz) rice (dry) (I would use Brown Rice)
  • 1 (16oz can) tomatoes
  • 1 (16oz can) chickpeas
  • Handful edamame beans (or veg of choice)
  • 350ml (12oz) vegetable stock
  • 1 green onion, sliced
  • Salt & pepper

Preparation

  1. Fry the onions and garlic until soft

  2. Add the herbs and paprika

  3. Fry for another minute

  4. Add the rice and stir, cook for 3 mins

  5. Add tomatoes, veg and stock

  6. Season to taste with salt & pepper

  7. Stir, then add lid and cook gently for 20 mins

  8. Leave lid on and let it rest for 5 minutes

  9. Fluff the rice with a fork then serve with spring onion sprinkled on top and a dash of chilli sauce

  10. Enjoy
