Vegan Sushi Style Rice Burgers

Ingredients

  • 3 cups cooked sushi rice
  • 1 package FieldBurger, thawed to room temperature
  • 2 tablespoons rice vinegar
  • 1 tablespoon mirin
  • a pinch of salt (optional)

Optional toppings

  • Furikake seasoning or cut nori sheets (optional)

Fillings

  • kale leaves
  • avocado slices
  • julienned purple cabbage

Condiment

  • yellow mustard
  • maple syrup

Preparation

Rice buns

  1. Season the cooked sushi rice with rice vinegar and mirin, then let it cool.

  2. Place about 1/3 cup of rice into a plastic wrap-lined 2-inch diameter round bowl with a flat bottom.

  3. Press the rice tightly using a spoon or spatula to form a bun; alternatively, use a glass bowl or sushi presser.

  4. In a heated non-stick pan with a drizzle of oil, sear the rice bun until golden brown on both sides.

  5. Set the rice buns aside until ready to use.

Fieldburger patty

  1. Using the same pan, add a little more oil.

  2. Sear the FieldBurger for about 2-3 minutes on each side until slightly crispy.

Assembly

  1. Place one rice bun on a plate.

  2. Layer with a kale leaf, a handful of julienned purple cabbage, the FieldBurger, and a few avocado slices.

  3. Add a tiny spoonful of maple mustard.

  4. Top with another rice bun.

  5. Sprinkle with Furikake seasoning.

  6. Serve immediately.
