Vegan Tofu Tikka Masala Curry

Ingredients

  • 1 block (400g) extra firm tofu
  • 1/2 cup yogurt or full-fat coconut milk
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1 tsp garam masala
  • 1 tsp turmeric
  • 1 tsp paprika
  • 1/2 tsp sea salt

Curry base

  • 1 large onion
  • 5 cloves garlic
  • 2 tbsp ginger
  • 1/2 tsp cinnamon
  • 1/2 tsp coriander
  • 1 tsp garam masala
  • 2 tsp curry powder
  • 1 tsp red chili flakes
  • 1/2 tsp sea salt
  • 2 large ripe tomatoes
  • 1 cup full-fat coconut milk
  • 3-4 cups chopped veggies
  • 1 tsp maple syrup

Preparation

  1. Press and cube the tofu, then combine the coconut milk, spices, and salt in a shallow dish. Add in tofu cubes and coat evenly, then set aside for 15 minutes.

  2. In a large pot, sauté the onion, garlic, and ginger with oil or water. After 5 minutes, add in the spices, salt, and tomatoes. Incorporate well, then mix in veggies and marinated tofu. Cover and simmer on low heat; once veggies are almost tender, about 8 minutes, stir in coconut milk and maple syrup, and cook for another 5 minutes. Serve warm and enjoy.
