Vegan Tofu Tikka Masala Curry
Ingredients
- 1 block (400g) extra firm tofu
- 1/2 cup yogurt or full-fat coconut milk
- 1 tsp ground coriander
- 1 tsp ground cumin
- 1 tsp garam masala
- 1 tsp turmeric
- 1 tsp paprika
- 1/2 tsp sea salt
Curry base
- 1 large onion
- 5 cloves garlic
- 2 tbsp ginger
- 1/2 tsp cinnamon
- 1/2 tsp coriander
- 1 tsp garam masala
- 2 tsp curry powder
- 1 tsp red chili flakes
- 1/2 tsp sea salt
- 2 large ripe tomatoes
- 1 cup full-fat coconut milk
- 3-4 cups chopped veggies
- 1 tsp maple syrup
Preparation
Press and cube the tofu, then combine the coconut milk, spices, and salt in a shallow dish. Add in tofu cubes and coat evenly, then set aside for 15 minutes.
In a large pot, sauté the onion, garlic, and ginger with oil or water. After 5 minutes, add in the spices, salt, and tomatoes. Incorporate well, then mix in veggies and marinated tofu. Cover and simmer on low heat; once veggies are almost tender, about 8 minutes, stir in coconut milk and maple syrup, and cook for another 5 minutes. Serve warm and enjoy.
