Easy Vegan Tofu Tikka Masala

Ingredients

Marinated tofu

  • 1 block (400g) extra firm tofu, pressed and cubed
  • 1/2 cup yogurt or full-fat coconut milk
  • 1 tsp each: ground coriander, cumin, garam masala, turmeric, paprika
  • 1/2 tsp sea salt

Vegetables and spices

  • 1 large onion, diced (250g)
  • 5 cloves garlic, minced
  • 2 tbsp ginger, minced
  • 1/2 tsp cinnamon
  • 1/2 tsp coriander
  • 1 tsp garam masala
  • 2 tsp curry powder
  • 1 tsp red chili flakes
  • 1/2 tsp sea salt
  • 2 large ripe tomatoes, pureed (400g)
  • 1 cup full-fat coconut milk
  • 3-4 cups chopped veggies -- I used zucchini
  • 1 tsp maple syrup

Preparation

  1. Combine the coconut milk, spices, and salt in a shallow dish. Add in tofu cubes and coat evenly, then set aside for 15 minutes.

  2. In a large pot, sauté the onion, garlic, and ginger with oil or water.

  3. After 5 minutes, add in the spices, salt, and tomatoes. Incorporate well.

  4. Then mix in the veggies and marinated tofu.

  5. Cover and simmer on low heat until veggies are almost tender, about 8 minutes.

  6. Stir in the coconut milk and maple syrup, and cook for another 5 minutes.

  7. Serve warm.
