Easy Vegan Tofu Tikka Masala
Ingredients
Marinated tofu
- 1 block (400g) extra firm tofu, pressed and cubed
- 1/2 cup yogurt or full-fat coconut milk
- 1 tsp each: ground coriander, cumin, garam masala, turmeric, paprika
- 1/2 tsp sea salt
Vegetables and spices
- 1 large onion, diced (250g)
- 5 cloves garlic, minced
- 2 tbsp ginger, minced
- 1/2 tsp cinnamon
- 1/2 tsp coriander
- 1 tsp garam masala
- 2 tsp curry powder
- 1 tsp red chili flakes
- 1/2 tsp sea salt
- 2 large ripe tomatoes, pureed (400g)
- 1 cup full-fat coconut milk
- 3-4 cups chopped veggies -- I used zucchini
- 1 tsp maple syrup
Preparation
Combine the coconut milk, spices, and salt in a shallow dish. Add in tofu cubes and coat evenly, then set aside for 15 minutes.
In a large pot, sauté the onion, garlic, and ginger with oil or water.
After 5 minutes, add in the spices, salt, and tomatoes. Incorporate well.
Then mix in the veggies and marinated tofu.
Cover and simmer on low heat until veggies are almost tender, about 8 minutes.
Stir in the coconut milk and maple syrup, and cook for another 5 minutes.
Serve warm.
