Vegan Summer Rolls

Ingredients

  • 200g extra-firm tofu, a few romaine lettuce leaves, 1/3 cucumber optional, a few chopped up pineapple pieces, 1 cup shredded red cabbage, 1 cup shredded carrots, 1/2 cup bean sprouts, 1/4 cup fresh cilantro, 1-2 rice paper per summer roll ?for the peanut sauce:
  • 1/3 cup raw peanut butter, 2 tablespoons coconut vinegar, 2–3 tablespoons warm water, to desired consistency, 1 tablespoon tamari, 1 teaspoon ground ginger, 1/4 teaspoon garlic powder, 1/4 teaspoon crushed red pepper flakes

Preparation

  1. Marinade the tofu however you like with e

  2. Turmeric or a vegan BBQ sauce and fry in a pan with a little bit of oil or without oil if you have a non sticking pan

  3. Meanwhile, chop up vegetables and lay them out on a plate

  4. Next, prepare the Spicy PEANUT Butter Sauce by pouring all ingredients together in a small bowl, adding more warm water as needed, to desired consistency

  5. Afterwards, just start rolling up those summer rolls with the mentioned ingredients in them and ENJOY! (P

  6. The first ones can be a bit tricky to roll at first but you'll figure it quickly after trying on a few)
