Chickpea Tuna Salad

Ingredients

  • 14 oz. can of chickpeas, rinsed, and drained
  • • 1/4 cup of vegan mayo
  • • 1 tablespoon of Dijon mustard (or spicy!)
  • • squeeze of lemon (If you can get ume plum vinegar, that’s something a lot of people enjoy in this!!)
  • • 1 celery rib, chopped
  • • minced green or red onion (chopped lettuce sautéed in a pan with onion powder is a great alternative if you don’t have onion but you want the taste and texture!!)
  • • 1/2 teaspoon black pepper
  • • 1/4 teaspoon or more of cayenne pepper
  • —Pulse in a food processor OR blender—
  • • Ezekiel bread, toasted
  • • nori (my fav addition)
  • • romaine lettuce
  • • sesame seeds to top it (I personally add these to a lot of my meals for hormone balance)
