Fresh Summer Corn and Veggie Salad

Ingredients

  • 3 small cucumbers
  • Pint of cherry tomatoes
  • 1 large avocado
  • 2 ears of corn
  • 1 jalapeño
  • Quarter of red onion
  • Feta cheese
  • Drizzle of oil
  • Lime juice

Preparation

  1. Boil corn for 10 minutes with lid on

  2. Using a knife, cut the corn off the cob

  3. Dice the remaining ingredients

  4. Toss with a drizzle of olive oil and a squeeze of lime

  5. Sprinkle with sea salt and pepper
