Fresh Summer Corn and Veggie Salad
Ingredients
- 3 small cucumbers
- Pint of cherry tomatoes
- 1 large avocado
- 2 ears of corn
- 1 jalapeño
- Quarter of red onion
- Feta cheese
- Drizzle of oil
- Lime juice
Preparation
Boil corn for 10 minutes with lid on
Using a knife, cut the corn off the cob
Dice the remaining ingredients
Toss with a drizzle of olive oil and a squeeze of lime
Sprinkle with sea salt and pepper
