Mint Golden Beet and Pea Salad

Ingredients

  • 3 golden beets -1 cup arugula - 1 cup peas (I use frozen peas and simply unthaw them when I can't buy fresh) - 12 or more mint leaves roughly chopped
  • Steam the beets about 25-30 minutes until easily sliced
  • Peel and cut into eighths
  • Dressing: 3 TBSP balsamic vinegar - 2 TBSP fresh lemon juice - 1 TBSP liquid honey - 1/4 cup olive oil
  • Zest the lemon before you juice it so you garnish the salad
  • Layer veggies in bowl and drizzle the well mixed dressing
  • Top with lemon zest and salt and pepper
  • Enjoy
