Mixed Grain Salad with Pomegranate, Beetroot and Kale

Ingredients

  • 1 pack of mixed grains (I used M&S tricolour)
  • 2 medium beetroots, roasted & diced
  • 1 cup pomegranate seeds
  • 1/4 cup red onion, finely chopped
  • 1/4 cup chopped parsley
  • 1/4 cup chopped mint
  • 1/2 cup vegan feta (optional)
  • 1/4 cup chopped walnuts or pistachios (optional)
  • Salt & pepper to taste

Lemon dressing

  • 1 cup olive oil
  • Juice of 1 lemon
  • 1 tsp lemon zest
  • 2 tbsp agave or maple syrup
  • 2 tsp Dijon mustard
  • Salt & pepper to taste

Preparation

  1. Cook grains as per packet instructions and let cool.

  2. Roast beets at 200°C wrapped in foil for 20-30 minutes. Cool, peel and dice.

  3. In a bowl, mix grains, beetroot, pomegranate, onion, herbs, feta and nuts.

  4. Add dressing, toss to combine.

  5. Let sit for 15 minutes. Serve chilled or at room temperature.

Lemon dressing

  1. Whisk or shake all ingredients together in a jar.

  2. Adjust to taste by adding more lemon or sweetener if needed.
