Vegan Mediterranean Inspired Salad

Ingredients

Salad

  • a handful of mixed greens
  • 1 large cucumber
  • 1 cup cherry tomatoes
  • 1 avocado
  • 1/2 cup fresh dill
  • 1 small shallot
  • 1/4 cup olives
  • 1/4 cup crushed vegan feta
  • 1-2 tbsp capers

Dressing

  • 1/3 cup olive oil
  • 1/4 cup apple cider vinegar
  • juice of 1/2 lemon
  • 1 tbsp maple syrup
  • 1 tbsp Dijon mustard
  • 1 tsp minced garlic
  • 1 tsp salt
  • 1/2 tsp pepper

Preparation

  1. Start by washing and chopping the produce.

  2. Add the mixed greens, cucumber, tomatoes, avocado, dill, shallot, olives, feta, and capers to a large bowl.

  3. Whisk together the olive oil, apple cider vinegar, lemon juice, maple syrup, Dijon mustard, garlic, salt, and pepper to make the dressing.

  4. Pour the dressing over the salad, mix everything together, and serve.
