Vegan Rainbow Veggie Salad
Ingredients
- 1 large head romaine lettuce
- 1 cup cherry tomatoes
- 1 cup carrot
- 1 yellow bell pepper
- 1 cucumber
- 1/2 red onion
Honey mustard vinaigrette
- 3 tablespoons red wine vinegar
- 3 tablespoons plant based honey or agave
- 3 tablespoons dijon mustard
- 1 tablespoon dried oregano
- 1 garlic clove
- 3 tablespoons olive oil
- salt, to taste
- pepper, to taste
Preparation
On a cutting board, chop the head of lettuce.
In a large bowl, combine the romaine lettuce, cherry tomatoes, shredded carrots, yellow bell pepper, cucumber, and diced red onion.
To make the dressing, combine the red wine vinegar, honey, dijon mustard, dried oregano, garlic, salt, and pepper in a medium bowl, and whisk together until the dressing is thick.
Pour the dressing over the salad just before serving.
