Potato Salad

Ingredients

  • 900g potatoes, a firm type.
  • 3 spring onions, diced
  • 1 small red onion, diced
  • ruccola - or spinach
  • cocktail tomatoes, diced
  • 1/2 bell pepper, red or yellow
  • salt & pepper
  • 2 tbsp mustard - preferably dijon
  • 200ml vegan mayonnaise or creme friache
  • 50ml oat cream, or water
  • 1/2 tbsp lemon juice

Preparation

  1. Halve the potatoes and boil until soft. Pour away the water and allow to cool slightly

  2. In a bowl mix together the creme friache, mustard oat cream and lemon juice

  3. Add the veggies to the potatoes and then pour away the creme fraiche mix
