Potato Salad
Ingredients
- 900g potatoes, a firm type.
- 3 spring onions, diced
- 1 small red onion, diced
- ruccola - or spinach
- cocktail tomatoes, diced
- 1/2 bell pepper, red or yellow
- salt & pepper
- 2 tbsp mustard - preferably dijon
- 200ml vegan mayonnaise or creme friache
- 50ml oat cream, or water
- 1/2 tbsp lemon juice
Preparation
Halve the potatoes and boil until soft. Pour away the water and allow to cool slightly
In a bowl mix together the creme friache, mustard oat cream and lemon juice
Add the veggies to the potatoes and then pour away the creme fraiche mix
