Quick and Delicious Fall Pecan-Apple-Bacon Salad

Ingredients

  • 7-8 pieces of cooked bacon
  • 1/2 cup chopped pecans
  • 1/3 cup feta cheese
  • 2 apples
  • Kale (as much as desired)

For Dressing

  • 1/2 cup olive oil
  • 1/4 cup maple syrup
  • 1/4 cup apple cider vinegar
  • 1 tbsp fresh lemon juice
  • Sprinkle of salt and pepper

Preparation

  1. Preheat the oven to 425°F (220°C) and bake the bacon for about 15 minutes. Pat the grease off the bacon after baking.

  2. Chop the apples according to your preference—dice or slice them.

  3. Chop the bacon into small pieces.

  4. For the dressing, combine olive oil, maple syrup, apple cider vinegar, fresh lemon juice, salt, and pepper in a food processor or mixer. Blend until well mixed.

  5. In a large bowl, combine the chopped bacon, chopped pecans, crumbled feta cheese, chopped apples, and as much kale as desired.

  6. Pour the dressing over the salad and toss to combine.
