Spicy Tofu Skin Salad
Ingredients
- 7 oz tofu skin or noodles
- 2 Lebanese cucumbers
- 1 small carrot
- 1-2 tsp fresh ginger
- 2-3 garlic cloves
- 2 tbsp Chinese black vinegar
- 2 tbsp soy sauce
- 1/2 tbsp maple syrup or sugar
- 1 tsp sesame oil
- 1-2 tbsp lao gan ma
Preparation
Prepare the vegetables by cutting the cucumbers into thin strips and julienning the carrot.
In a bowl, mix together the ginger, garlic, black vinegar, soy sauce, maple syrup or sugar, sesame oil, and lao gan ma to create the dressing.
Combine the tofu skin or noodles with the prepared vegetables and dressing, then toss until well coated.
Adjust seasoning to taste and serve immediately.
Tips
Adjust dressing ingredients to taste as exact measurements are not critical.
For a non-spicy version, omit the lao gan ma and substitute with another oil for aroma.
Tofu skin can be purchased at Asian grocery stores and provides a chewy texture similar to pressed tofu.
