Summer Vegan Meal with Wraps, Salad, and Corn

Ingredients

Vegan blt lettuce wraps

  • Butter lettuce leaves
  • Mayo spread: half veganaise and half almond milk greek yogurt
  • Arugula
  • Heirloom tomato slices
  • Smoky tempeh bacon

Summer caprese salad

  • Heirloom tomatoes, cubed
  • Avocado, cubed
  • Vegan mozzarella, cubed
  • Nectarine or peach, cubed
  • Fresh basil
  • Fresh mint
  • Cracked pepper
  • Balsamic vinegar
  • Extra virgin olive oil

Sweet sweet corn

  • Sweet corn
  • Vegan butter
  • Salt and pepper

Preparation

Vegan blt lettuce wraps

  1. Mix veganaise and almond milk greek yogurt to make spread

  2. Cook smoky tempeh bacon according to package instructions

  3. Assemble wraps by spreading mixture on lettuce leaves and adding arugula, tomato slices, and tempeh bacon

Summer caprese salad

  1. Cube tomatoes, avocado, vegan mozzarella, and nectarine or peach

  2. Chop fresh basil and mint

  3. Combine all ingredients and season with cracked pepper, balsamic vinegar, and olive oil

Sweet sweet corn

  1. Cook sweet corn by boiling or grilling until tender

  2. Add vegan butter and season with salt and pepper
