Vegan Greek Salad with Feta Alternative

Ingredients

  • 4 large vine tomatoes
  • 1 cucumber
  • 1/2 red onion
  • 16 Kalamata olives
  • 1 tsp dried oregano
  • 85g vegan feta cheese
  • 4 tbsp Greek extra virgin olive oil
  • A few leaves of baby spinach

Preparation

  1. Cut the tomatoes into irregular wedges

  2. Peel, deseed, and roughly chop the cucumber

  3. Thinly slice the red onion

  4. Combine all prepared ingredients in a large bowl

  5. Add olive oil and oregano, then toss to mix well
