Vegan Greek Salad with Feta Alternative
Ingredients
- 4 large vine tomatoes
- 1 cucumber
- 1/2 red onion
- 16 Kalamata olives
- 1 tsp dried oregano
- 85g vegan feta cheese
- 4 tbsp Greek extra virgin olive oil
- A few leaves of baby spinach
Preparation
Cut the tomatoes into irregular wedges
Peel, deseed, and roughly chop the cucumber
Thinly slice the red onion
Combine all prepared ingredients in a large bowl
Add olive oil and oregano, then toss to mix well
