Fresh Greek Salad with Tomatoes and Feta
Ingredients
- 3 medium sized ripe tomatoes quartered
- 1/2 cucumber thick half moon slices
- 1 small red onion finely sliced
- 100g feta chunks
- 1/2 green bell pepper sliced (ok to sub other colour)
- 2 tsp red wine vinegar (sub apple cider vinegar or white wine vinegar)
- 2 tbsp olive oil
- 1 tsp dried oregano
- Handful black olives
Preparation
For a more traditional version, use green bell pepper, red wine vinegar, and Kalamata olives if available.
Combine all ingredients in a mixing or salad bowl.
Let the salad sit for 30 minutes, stirring several times, to allow the flavors to develop before serving.
