Fresh Greek Salad with Tomatoes and Feta

Ingredients

  • 3 medium sized ripe tomatoes quartered
  • 1/2 cucumber thick half moon slices
  • 1 small red onion finely sliced
  • 100g feta chunks
  • 1/2 green bell pepper sliced (ok to sub other colour)
  • 2 tsp red wine vinegar (sub apple cider vinegar or white wine vinegar)
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • Handful black olives

Preparation

  1. For a more traditional version, use green bell pepper, red wine vinegar, and Kalamata olives if available.

  2. Combine all ingredients in a mixing or salad bowl.

  3. Let the salad sit for 30 minutes, stirring several times, to allow the flavors to develop before serving.
