Easy Chickpea Caprese Salad
Ingredients
- 1 can of chickpeas, drained
- 1 cup cherry tomatoes, halved
- 1 cup small mozzarella balls, halved
- 1/2 large cucumber sliced and halved
- handful of basil leaves, chopped
- 1 tbsp olive oil
- 2 tbsp balsamic vinegar
Preparation
Toss the chickpeas, tomatoes, mozzarella, cucumber, and basil in a large bowl
Drizzle oil and vinegar on top. Toss again. Enjoy
