Easy Chickpea Caprese Salad

Ingredients

  • 1 can of chickpeas, drained
  • 1 cup cherry tomatoes, halved
  • 1 cup small mozzarella balls, halved
  • 1/2 large cucumber sliced and halved
  • handful of basil leaves, chopped
  • 1 tbsp olive oil
  • 2 tbsp balsamic vinegar

Preparation

  1. Toss the chickpeas, tomatoes, mozzarella, cucumber, and basil in a large bowl

  2. Drizzle oil and vinegar on top. Toss again. Enjoy
