Refreshing Panzanella Salad with Tomatoes and Bread
Ingredients
- 500g mixed tomatoes
- 1 tbsp capers
- 2 tbsp olive oil
- 1 tbsp red wine vinegar
- 2-3 slices of stale sourdough
- Handful of fresh basil
Preparation
Roughly cut the tomatoes into different sizes and place in a bowl.
Salt heavily with about 1 teaspoon heaped.
Add the capers, vinegar, and olive oil.
Break or cut the bread into chunks and mix through.
Add pepper to taste and sprinkle over fresh basil.
