Refreshing Panzanella Salad with Tomatoes and Bread

Ingredients

  • 500g mixed tomatoes
  • 1 tbsp capers
  • 2 tbsp olive oil
  • 1 tbsp red wine vinegar
  • 2-3 slices of stale sourdough
  • Handful of fresh basil

Preparation

  1. Roughly cut the tomatoes into different sizes and place in a bowl.

  2. Salt heavily with about 1 teaspoon heaped.

  3. Add the capers, vinegar, and olive oil.

  4. Break or cut the bread into chunks and mix through.

  5. Add pepper to taste and sprinkle over fresh basil.
