Vegan Sesame Noodle Salad

Ingredients

  • 1 pack wheat udon noodles
  • 2 Persian cucumbers
  • 2 green onions
  • 2 cups green cabbage
  • 2 cups broccoli florets
  • 1 tablespoon sesame oil
  • 1 tablespoon sesame tahini
  • 2 tablespoons light sodium soy sauce
  • 1 tablespoon dark soy sauce
  • 1 tablespoon pure maple syrup

Garnish

  • 2 tablespoons furikake
  • 2.5 avocados

Preparation

  1. Cook noodles according to package directions, adding broccoli florets during the last two minutes of cooking. Drain, rinse with cool water, and set aside.

  2. In a large bowl, mix the dressing by whisking together sesame oil, tahini, light soy sauce, dark soy sauce, and maple syrup.

  3. Add cucumbers, cabbage, and green onions to the bowl with the dressing and toss well.

  4. Add the noodles and broccoli, and toss until well combined.

  5. Garnish with furikake and serve with avocado.
