Soy and Garlic Tofu with Chunky Salsa

Ingredients

  • tofu
  • soy sauce
  • garlic
  • red onion
  • cucumber
  • baby tomatoes
  • parsley
  • black pepper
  • balsamic vinegar
  • brown rice
  • tri-color quinoa
  • sriracha mayo

Preparation

  1. Cook brown rice and tri-color quinoa according to package directions.

  2. Marinate tofu in soy sauce and raw garlic.

  3. Fry the marinated tofu on high heat until cooked.

  4. Chop red onion, cucumber, baby tomatoes, and parsley, then mix with raw garlic, black pepper, and balsamic vinegar to make the salsa.

  5. Assemble by serving hot tofu with cold salsa, mixed rice and quinoa, and drizzle with sriracha mayo.

  1. Hot tofu pairs well with cold salsa for a contrast in temperatures and flavors.
