Alkaline ‘Garlic’ Bread and Quinoa Stir Fry
Ingredients
- Garlic bread ingredients:
- - 1 1/2 cup spelt flour
- - 3/4 cup chickpea flour
- - 1 tsp. onion powder
- - 1/8 tsp. cayenne pepper
- - 1/2 tsp. thyme
- - 1/4 tsp. oregano
- - 1/4 tsp. basil
- - 1/4 tsp. dill
- - 1/2 tsp. sea salt
- - 1 tsp. grapeseed oil
- - 1 cup spring water
- Quinoa stir fry:
- - 1 cup quinoa
- - 2 cup spring water
- - 1 red onion, diced
- - 1 bell pepper, diced
- - 1/2 zucchini, diced
- - 1 cup cooked chickpeas
- - 1/4 tsp. cayenne pepper
- - 1/4 tsp. sea salt
- - 1 tsp. grapeseed oil
Preparation
Put the flours and spices in a bowl and combine. Slowly add in the spring water (you might need less than 1 cup) and kneed the dough into a ball. Flour your surface and roll out the dough until it’s 1-2cm thick. Now add a good amount of onion powder, dill and sea salt. Then oil the top layer of the dough with grapeseed oil. Add some more spices to finish it off and bake it in a preheated oven for 5 minutes on 350F. Cut into pieces
Cook the quinoa in 2 cups of spring water for about 15 minutes until the quinoa has obsorbed all the water and has become fluffy.
Heat up the grapeseed oil in a pan and cook the red onion until they are translucent. Add in the bell pepper and zucchini, cook until softened. Now add the spices. At last stir in the chickpeas and you’re done
