Coronation Chicken Subs

Ingredients

  • 2 large chicken breasts, cubed
  • 1/2 tsp turmeric powder
  • 6 - 8 heaped tablespoons mayonnaise (replace some mayonnaise with Greek yoghurt if you prefer a healthier version)_
  • 2 - 3 tsp curry powder
  • 1/3 cup of raisins/sultanas
  • 1 - 2 tsp mango chutney (optional)_
  • 2 - 3 sliced spring onions (optional)_
  • 4 - 6 baguettesbutter (optional)_little gem lettuce

Preparation

  1. Boil the chicken breasts in water + the turmeric powder for 15 minutes until cooked all the way through (cut the chicken breast into smaller pieces as they cook and cool faster)

  2. Drain, cool and shred using your hands

  3. In a mixing bowl add the shredded chicken + mayonnaise first and mix through

  4. Next add the curry powder, raisins, mango chutney and spring onions

  5. Mix everything until combined, taste and season only if needed, I don't add an extra salt/pepper as I find it's seasoned enough

  6. Slice your baguettes (if they're part baked baguettes, follow instructions on the packet to cook first)

  7. Butter the inside (optional) and then place a layer of little gem lettuce leaves along the bottom

  8. Fill the baguettes with your coronation chicken filling and enjoy
