Paneer Bhurji Sandwich with Eggless Siracha Mayo, Nylon Sev and Pomegranate Arils
Ingredients
- 200 grams paneer/tofu crumbled
- 11/2 teaspoons ginger-garlic Paste
- 1/2 a teaspoon cumin seeds
- 2 green chillies finely chopped
- 1 onion finely chopped
- 2 tomatoes finely chopped
- 1/4 green pepper/capsicum finely diced
- 1/2 a teaspoon chilli powder
- 1/4 teaspoon turmeric
- 1 tablespoon kasuri methi (roasted and crushed to a powder)
- Salt to taste
- Lots of coriander
- Butter/ oil to cook
Preparation
In a pan heat some butter, splutter cumin seeds, followed by green chillies and ginger garlic paste after 30 seconds add onions and sauté it with a pinch of salt until golden, now add the dry spices and cook briefly, add the tomatoes and cook until completely mushy and soft
Add the crumbled paneer and season with salt and cook until all the flavours are absorbed and until it all comes together
Tip in the green peppers and cook just enough to keep them crunchy
Finally add the kasuri methi and give it a good mix
Finish it off with coriander
Butter whole wheat bread slices follow it up with some light green sandwich chutney and generously spoon in the cooled paneer bhurji and toast the sandwiches until golden on both sides
Cut them into quarters, drizzle some siracha mayo, nylon sev, pom arils and coriander
