Toast to Spring

Ingredients

  • kumara -- 2 cut into 5mm slices lengthwise or what ever shape you want.
  • mushrooms - 2 cup roughly chopped
  • mexican beans tin - 1
  • salt according to your taste
  • blackpepper - 1tsp
  • oil - 4 tbsp ( to drizzle and cook)
  • garam masala- 1tsp
  • corriander powder-1tsp
  • cumin seeds- 1tsp
  • onion - 1 roughly chopped
  • avocado - 1 mashed
  • for garnish corriander leaves, coconut cream and cherry tomatoes

Preparation

  1. Slice kumara , arrange these in a baking tray , toss it with olive oil from both sides, sprinkle some salt and keep it in oven for 20 minutes on 200° cook until soft

  2. For mushroom mince , in a pan add oil , add cumin seeds, let it splutter then add onions, fry until nice and pink in color, then add your mushrooms, saute for few seconds then add mexican beans to it , cook for 2 to 3 minutes, once it starts getting thick in consistency add , salt , black pepper, garam masala, coriander powder, corriander leaves and mix well

  3. Cook further for 2 more minutes and close the heat after you can add your cheese or butter at this stage of you want ✒ take tray out from oven , on a plate arrange your kumara toast , layer it with mushroom mince , ✒add mashed avocado mixed with lime and chilli , extra corriander leaves and serve it with a splash of coconut cream and enjoy
