Heat 1/2 cup oil and throw in 8 cloves of thinly sliced garlics, 2 thinly sliced scallions, 1/2 tbsp ground coriander, 1/2 tsp ground cumin,1/4 tsp curry powder, 3/4 tbsp white sesame seeds, 2 tbsp Sichuan chilli pepper paste. Let the spices blume in the oil, take off the heat and add in 1/4 cup + 1 tbsp Japanese sesame paste, 1/4 cup soy sauce,1 tbsp smooth peanut butter, 3/4 tbsp light brown sugar, 3/4 tsp balsamic vinegar. Mix everything well. Serve over noodles
