Harissa Hummus

Ingredients

  • harissa hummus
  • 1/4 cup olive oil
  • 1 shallot
  • sea salt
  • 2 cloves garlic
  • 1 tsp cumin
  • 1 tsp honey
  • 2-2.5 cups cooked chickpeas
  • 1/4 cup tahini
  • 1/3 cup lemon juice
  • 1/3 cup plus water

Preparation

  1. Heat 1/4 cup olive oil in a small fry pan over medium heat. Add a large shallot, thinly sliced, and a big pinch of salt. Sauté until shallots are softened and starting to brown. Add 2 cloves roughly chopped garlic, 2-3 teaspoons harissa powder, 1 teaspoon cumin & 1 teaspoon honey. Cook for 1-2 minutes, remove from heat

  2. In a blender or food processor, purée chickpeas, tahini, lemon juice, 1/3 cup water, 1/2 teaspoon salt and the shallot/oil/spice mixture (use a spatula to get all that goodness out of the pan). Blend all ingredients until smooth, adding water or olive oil to achieve desired consistency. Season with salt to taste
