Roasted Potato Salad with Creamy Dressing
Ingredients
- 500g potatoes (washed and chopped for roasting)
- 2 tablespoons plain non-dairy yogurt
- 1 tablespoon avocado oil
- 1 tablespoon lemon juice
- 2 tablespoons white wine or apple cider vinegar
- 1 tablespoon dijon mustard
- 1 teaspoon agave nectar or maple syrup
- 2 teaspoons dried dill
- 2 tablespoons fresh dill
- 1/4 teaspoon sea salt
- 1/4 teaspoon black pepper
- 3-4 cloves garlic (minced)
- 1 teaspoon hot sauce (optional)
Preparation
Roast the potatoes: Preheat oven to 200°C, chop potatoes into bite-sized pieces, toss with a little oil and salt, and roast for 30-40 minutes until golden and crispy.
Mix all the sauce ingredients together in a bowl.
Add the sauce to the roasted potatoes, toss to combine, and serve. Enjoy!
