Roasted Potato Salad with Creamy Dressing

Ingredients

  • 500g potatoes (washed and chopped for roasting)
  • 2 tablespoons plain non-dairy yogurt
  • 1 tablespoon avocado oil
  • 1 tablespoon lemon juice
  • 2 tablespoons white wine or apple cider vinegar
  • 1 tablespoon dijon mustard
  • 1 teaspoon agave nectar or maple syrup
  • 2 teaspoons dried dill
  • 2 tablespoons fresh dill
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 3-4 cloves garlic (minced)
  • 1 teaspoon hot sauce (optional)

Preparation

  1. Roast the potatoes: Preheat oven to 200°C, chop potatoes into bite-sized pieces, toss with a little oil and salt, and roast for 30-40 minutes until golden and crispy.

  2. Mix all the sauce ingredients together in a bowl.

  3. Add the sauce to the roasted potatoes, toss to combine, and serve. Enjoy!
