Snapper Fish

Ingredients

  • 2 fillets of snapper⁣
  • salt and pepper to taste⁣
  • 1 tsp mayonnaise ⁣
  • 1/2 tsp harissa paste⁣
  • 1/2 tsp lemon juice⁣
  • oil to pan fry ⁣

Preparation

  1. Marinate the fish fillets in all the ingredients mentioned above for at least 30 minutes to 2 hours

  2. Take off the excess marinade

  3. Pan fry fish skin side down for 3-4 minutes on both side

  4. Rest the fish for 2-3 minutes and then serve it with the orzo or mashed potatoes

  5. Ingredients for sauce:⁣

  6. G asparagus peeled and chopped⁣

  7. G spring onion green part chopped⁣

  8. Ml white wine⁣

  9. Ml cream ⁣

  10. Ml milk⁣

  11. Banana shallot finely chopped ⁣

  12. Clove of garlic chopped ⁣

  13. Salt and pepper to taste⁣

  14. A dash of pernod ⁣

  15. Ml butter⁣

  16. Heat butter, saute shallots and garlic till translucent

  17. Add in the wine and cook till it almost evaporates

  18. Add in the asparagus cook for 5 minutes, season it well

  19. Add in the spring onion and cook for more 2 minutes

  20. Add in the milk give it a gentle boil

  21. Add in the cream and cook for 1 minute

  22. Blend it into a fine puree, add in the pernod and serve warm
