Snapper Fish
Ingredients
- 2 fillets of snapper
- salt and pepper to taste
- 1 tsp mayonnaise
- 1/2 tsp harissa paste
- 1/2 tsp lemon juice
- oil to pan fry
Preparation
Marinate the fish fillets in all the ingredients mentioned above for at least 30 minutes to 2 hours
Take off the excess marinade
Pan fry fish skin side down for 3-4 minutes on both side
Rest the fish for 2-3 minutes and then serve it with the orzo or mashed potatoes
Ingredients for sauce:
G asparagus peeled and chopped
G spring onion green part chopped
Ml white wine
Ml cream
Ml milk
Banana shallot finely chopped
Clove of garlic chopped
Salt and pepper to taste
A dash of pernod
Ml butter
Heat butter, saute shallots and garlic till translucent
Add in the wine and cook till it almost evaporates
Add in the asparagus cook for 5 minutes, season it well
Add in the spring onion and cook for more 2 minutes
Add in the milk give it a gentle boil
Add in the cream and cook for 1 minute
Blend it into a fine puree, add in the pernod and serve warm
