Tomato Chutney

Ingredients

  • 250 g red onions
  • 500 g mixed-colour tomatoes
  • 1 fresh red chilli
  • 75 ml red wine vinegar
  • 140 g coconut sugar

Preparation

  1. Simply peel and slice your onions, chop your tomatoes up, and finely slice your chili

  2. Pour your ingredients in a pan and lightly mix, and allow to cook until a jam-like texture (30-40 minutes)

  3. Pour this into a sterilized jar and it should be good to pop into your meals for up to 4 weeks
