Turmeric Coconut Curry

Ingredients

  • turmeric coconut curry
  • 1 tbsp turmeric
  • 1 tbsp cumin
  • 1 tsp curry powder
  • 1/2 tsp fennel seeds
  • 1 tbsp coconut oil
  • 1 onion chopped
  • 1 red chilli
  • 3 cloves garlic
  • 1 large courgette (quartered)
  • 1 small butternut pumpkin cut into cubes and cooked
  • 1 tin coconut milk
  • 1/2 tin coconut cream

Preparation

  1. Heat turmeric, cumin, curry powder & fennel seeds in a pan

  2. Then add coconut oil and chopped onion and cook until onions translucent

  3. Add courgette and red chilli

  4. Then add 3 cloves minced garlic and fry for a minute longer

  5. Once cooked add coconut milk and coconut cream

  6. Add large pinch of salt and pepper and lastly add precooked (cubed) butternut

  7. Taste test after 20 minutes then add more spice where needed

  8. Serve with fluffy rice of choice and top with coconut yogurt and cashew nuts
