Vegan Miso Noodle Bowl
Ingredients
- noodles from kingsoba noodle culture
- bok choy
- red bell pepper
- mushrooms
- wild spinach
- green onion
- garlic
- tofu
- sesame seeds
- peanuts
- sriracha
Miso sauce
- 2 tbsp miso
- 2 tbsp Korean bbq sauce
- 2 tbsp tamari
- 1 tbsp brown rice vinegar
- 2 tsp sesame oil
- 1 tsp minced ginger
- 1 clove garlic
Preparation
Roast the tofu.
Whisk together the miso sauce ingredients.
Cook the noodles according to package instructions.
Prepare the vegetables by cooking them, such as stir-frying or roasting.
Assemble the noodle bowl by combining the noodles, vegetables, roasted tofu, miso sauce, sesame seeds, peanuts, and sriracha.
