Vegan Miso Noodle Bowl

Ingredients

  • noodles from kingsoba noodle culture
  • bok choy
  • red bell pepper
  • mushrooms
  • wild spinach
  • green onion
  • garlic
  • tofu
  • sesame seeds
  • peanuts
  • sriracha

Miso sauce

  • 2 tbsp miso
  • 2 tbsp Korean bbq sauce
  • 2 tbsp tamari
  • 1 tbsp brown rice vinegar
  • 2 tsp sesame oil
  • 1 tsp minced ginger
  • 1 clove garlic

Preparation

  1. Roast the tofu.

  2. Whisk together the miso sauce ingredients.

  3. Cook the noodles according to package instructions.

  4. Prepare the vegetables by cooking them, such as stir-frying or roasting.

  5. Assemble the noodle bowl by combining the noodles, vegetables, roasted tofu, miso sauce, sesame seeds, peanuts, and sriracha.
