Vegan Vodka Cream Sauce

Ingredients

  • 1 quart marinara
  • 1 cup vodka
  • 13-14 oz full fat coconut milk
  • 4 cloves garlic, crushed
  • 3 tbl nutritional yeast
  • 1 pound spaghetti noodles

Preparation

  1. Cook your noodles in salted water to al dente. Reserve 1/2 cup pasta water before draining. Keep noodles in collader and don't rinse. ?

  2. Heat pot over medium high heat. Add crushed garlic and dry saute for a minute. Pour in vodka and stir. Cook over medium heat for 5 min. Add in nutritional yeast, cook for a minute, pour in marinara. Bring to a simmer and cook for 5 min. Pour in coconut milk, stir, and bring to a simmer. Turn off heat. Add in reserved pasta water, stir, and add the cooked noodles. Let sit for 5 min before serving
